Salar Flaky Smoked Salmon with Avocado Salad
recipe by Mrs R. Pilly, Dundee, serves 4
Ingredients:
Wholemeal bread
2 avocados
salt & pepper
lime juice, double cream
cucumber (very thinly sliced)
Salar Flaky Smoked Salmon
dill
Salad:
Shredded lettuce
cubed avocado
red grapefruit segments
all sprinkled with a mixture of oil, lime juice and honey.
Method:
1. Toast the bread and when cold cut it into rounds using a scone cutter.
2. Peel and mash 2 avocados, season with salt and pepper.
3. Whip the double cream and add to the avocado mixture until a light spongy texture is achieved.
4. Pile 2 or more spoonsful of the avocado mixture over the toast, still inside the scone cutter.
5. Arrange very thinly sliced cucumber over this and top with pieces of Flaky Smoked Salmon and dill.
6. Gently remove the cutter and serve with the salad - a winner!
