Tian of Salar Flaky Smoked Salmon, Mango, Feta and Basil

Salar Flaky Smoked Salmon broken into pieces
mango
Feta cheese
basil leaves
freshly milled black pepper
green pesto
basil-infused olive oil
olive oil croutons
balsamic vinegar reduction
lumpfish roe
Simply mix pieces of Salar Flaky Smoked Salmon, diced mango, pieces of Feta cheese and freshly torn basil leaves in a bowl. Season lightly with freshly milled black pepper. Add a little pesto and some basil-infused olive oil to moisten then mix the contents of the bowl together.
Place dollops of the mixture into rings (eg pastry cutter rings), press the mixture down firmly then slide the ring off.
Garnish round with olive oil croutons, evenly spaced, and drizzle round the plate with more of the olive oil and balsamic vinegar reduction.
Top with a teaspoon of lumpfish roe and a small basil leaf, upright.
Always serve freshly prepared.
