Dressing for Salar Flaky Smoked Salmon

Mix together equal quantities of good quality mayonnaise (eg Hellmann's) and creme fraiche with a trace of Dijon mustard, a squeeze of lemon juice, a little grated lemon rind and plenty of coarse ground black pepper.

Place in a serving pot and sprinkle a little finely chopped parsley on top.
