Baked Eggs with Salar Flaky Smoked Salmon

Ingredients: 100g Flaky Smoked Salmon broken into pieces, 1 or 2 large free range eggs, butter, cream, salt and pepper.
Method:
Butter an ovenproof dish and spread the Flaky Smoked Salmon over the bottom. Break 1 or 2 eggs over the Flaky Smoked Salmon and pour double cream over them. Season with salt (a little) and pepper. Place in a moderate oven for 12 to 15 minutes until the eggs are just set.
Serve immediately with crusty bread or hot toast.
