Salar Flaky Smoked Salmon Stir-Fry

Serves 4 as a main course.
Ingredients
250g Salar Flaky Smoked Salmon broken into flakes
50g carrots
50g red and yellow peppers
50g mushrooms
50g mange toute peas
12 cherry tomatoes
1 bunch spring onions
olive oil
500g noodles
Method
Wrap the Flaky Smoked Salmon in a piece of lightly oiled foil and warm gently in an oven on a low heat whilst you prepare the rest of the stir-fry.
You can stir fry any vegetables, but here is a suggestion :
50g (2oz) carrots, thinly sliced
50g (2oz) red and yellow peppers, sliced
50g (2oz) mushrooms, sliced
50g (2oz) mange toute peas
12 cherry tomatoes, sliced
1 bunch spring onions, sliced (slice the white part finely but leave the green stalks in long pieces)
Heat about 1 tablespoon vegetable oil in a frying pan or wok and first toss in the carrots and peppers, cook for a couple of minutes and then add the mushrooms and then the mange toute peas. Finally add the tomatoes and spring onions.
This whole process should take about 10 minutes, so while you are turning the vegetables, cook the noodles according to the instructions on the packet.
Serve the stir-fried vegetables on a bed of noodles and sprinkle on the flakes of warm Flaky Smoked Salmon - a dream!
