Salar Flaky Smoked Salmon Egg Bake

recipe by Sue Campbell, South Uist, serves 4


Ingredients :
4 hard boiled eggs
milk
200g Flaky Smoked Salmon
11/2 oz butter
2 oz plain flour
mature cheddar cheese (grated) to taste
black pepper
paprika.

Method :
Turn on the grill.

Shell and cut the hard boiled eggs lengthways. Remove the yolks, put them into a bowl and mash them with a drop of milk. Mix in the Flaky Smoked Salmon and season with black pepper.

Pile the mixture back into egg whites and place them upside down in an oven-proof dish.

Melt the butter in a saucepan, stir in the flour and slowly add the milk, stirring all the time, to make a white sauce of a thick, pouring consistency.

Add the grated cheese and season to taste, then pour the cheese sauce over the eggs and top with a generous sprinkling of grated cheese and then paprika on top.

Grill until heated through and crispy on top.

Serve with a crisp salad - wonderful!
