Salar Flaky Smoked Salmon and Rice Salad
recipe by Andrea, Slimmer Magazine, serves 4
Ingredients:
300g Salar Flaky Smoked Salmon broken into large flakes
300g cooked long grain rice
2 rashers lean bacon (chopped)
2 cloves garlic (crushed)
1 medium onion
3 sticks celery (chopped)
4 tomatoes (chopped)
1 large green pepper (deseeded and chopped)
3 tablespoons lemon juice
2 teaspoons parsley or coriander
salt and pepper to taste
2 tablespoons olive oil
Method:
Heat the oil in a large frying pan and gently brown the onion and garlic, add the bacon and cook, add the remaining vegetables and cook for a further 5 minutes.
Add the lemon juice, rice and herbs and cook for 4 more minutes, stirring continuously.
Gently stir in the Flaky Smoked Salmon , add salt and pepper to taste, cook for a couple more minutes and then serve.
