Salar Flaky Smoked Salmon Summer Salad
recipe by Mr Alasdair MacLeod, Isle of Lewis
Ingredients:
Salar Flaky Smoked Salmon, broken into pieces
Rocket leaves and a few shredded basil leaves
2-3 slices of thinly sliced red onions
Mozzarella cheese
Sliced tomato
Olive oil and balsamic vinegar dressing
Salt and fresh ground black pepper
A few pickled capers
Lemon wedges and strawberries to garnish
Pickled root ginger (optional)
To prepare:
Arrange the rocket leaves and torn basil on the base of your plate and then lay sliced red onion on top.
Lay the sliced mozzarella cheese on top of the salad.
Sprinkle a few capers on the salad and garnish with tomatoes and strawberries
Add salt and pepper to taste and a few slices of pickled ginger to the side of the plate.
Top with Flaky Smoked Salmon and the oil and vinegar dressing.
