Salar Flaky Smoked Salmon Kedgeree (1)
recipe by Jane Twelves, South Uist, serves 4 as a main course
Ingredients
200g whole grain brown rice
500g Salar Flaky Smoked Salmon, broken into flakes
2 croft-fresh eggs, hard boiled
olive oil / butter
3 medium sized onions, chopped
12 mushrooms, sliced
salt and freshly ground black pepper from mill
good handful of freshly chopped parsley
Method
Put the rice on to cook.
Chop the hard boiled eggs.
Fry the onions in olive oil or butter until dark golden brown, drain to remove excess oil.
Quickly toss the mushrooms in the hot oil.
Combine the cooked rice, Salar Flaky Smoked Salmon, chopped eggs, fried onions and mushrooms in a large serving bowl, season and warm through, the kedgeree must be piping hot when you eat it, sprinkle with the chopped parsley.
Serve with a green salad - delicious!
