Salar Flaky Smoked Salmon Scotch Eggs with curried mayonnaise

Ingredients:
1/2oz butter
1 small onion, finely chopped
2 teaspoons curry powder
1 tablespoon mango chutney
4 tablespoon mayonnaise
4 hard boiled eggs
8 oz Salar Flaky Smoked Salmon
1 egg white
1 egg beaten
2 oz fresh white breadcrumbs
Method:
Saute the onions in butter until cooked but not coloured.
Add the curry powder and cook for a minute.
Cool and add to the mayonnaise with the chutney.
Put the Flaky Smoked Salmon in a food processer with an egg white, pulsate until blended.
Mould round the eggs with floured hands.
Dig into the egg wash and breadcrumbs, twice.
Deep fry in hot oil until crips and golden.
Cut in half and serve hot or cold with curried mayonnaise and crispy salad.
