Salar Flaky Smoked Salmon Florentine
recipe by Jenny Twelves, South Uist, serves 4
Ingredients:
60g butter
1 packet frozen spinach
crushed clove of garlic, optional
600g Flaky Smoked Salmon flaked
2 tablespoons wholemeal flour
200 ml milk
125 ml cream
150g tasty cheese (mature cheddar highly recommended)
grated rind 1 lemon
2 tablespoons grated parmesan cheese
Method:
Cook the spinach in 30g melted butter and, if you wish, the crushed garlic, stirring constantly until the spinach is wilted. Spread spinach in a shallow, ovenproof dish. Spread the Flaky Smoked Salmon over the spinach. Melt the rest of the butter in a saucepan, add the flour and cook for 2 minutes. Remove from the heat and gradually stir in the milk and cream. Return to the heat and stir constantly until the mixture thickens and boils. Stir in the cheese and lemon rind and spread the mixture over the fish. Sprinkle with parmesan cheese and place in a moderate oven for about 20 minutes.
