Salar Flaky Smoked Salmon with Lemon and Rocket Mash
recipe by Catherine & John Tuffrey, Corsham, serves 4
Ingredients:
274g Salar salmon
8 medium potatoes
1 lemon
large handful of rocket leaves
knob of butter
milk
salt and pepper
Method:
Chop the rocket into small pieces.
Grate the lemon rind and squeeze out juice.
Cook the potatoes and mash over a low heat with butter and enough milk make it smooth but not runny. Add lemon rind and a teaspoon of lemon juice and
rocket and stir whilst continuing to warm until heated through. Season to taste with salt and black pepper.
Meanwhile, heat the Flaky Smoked Salmon in a microwave or oven in covered dish.
Divide the mash between 4 warmed plates and on top of each mound place a quarter of the salmon.
Delicious served with green beans.
