Alex's Salar Flaky Smoked Salmon Omelette

Ingrdients :
150 gms Salar Flaky Smoked Salmon
150ml milk
A good sprig of fresh flat leaf parsley
A handful of fresh tleaves
A good sprig of fresh chives
1 spring onion
1 small red onion
a dozen mixed peppercorns
6 large free range organic eggs
4 cherry tomatoes
1 fresh small green chilli (optional)
2 tablespoons of olive oil
10 gms unsalted butter

Method :
Break up the Flaky Smoked Salmon into small flakes.

Beat the eggs, add the milk and grind the peppercorns into the mixture.

Finely dice the onion and spring onion.

Chop the parsley, chives and tarragon leaves.

Deseed and slice the chilli (if using).

Mix the herbs, onions and chilli together and add to the egg mixture.

Slice the cherry tomatoes.

Cooking :
You will need a 12" diameter non stick or stainless steel fry pan with a lid.

Over a low fire heat up the oil in the pan and then add the butter.

Once the butter begins smoking add the egg mixture to the pan and then evenly distribute the pices of Flaky Smoked Salmon into the mixture.

Finally, garnish with the sliced cherry tomatoes.

Cover with the lid and cook over a low heat for about 10 minutes.

When the omelette is almost cooked finish off by browning the top under a grill or with a gas blow lamp.
