Salar Flaky Smoked Salmon with fennel dressing, served with wild rocket
Recipe by Mr Tom Collins, St Neots
Dressing:
Blitz the juice of half a lemon with 1 tablespoon freshly chopped fennel leaf, a small pinch of salt and 4 tablespoons of good olive oil.
Serving:
Arrange the Flaky Smoked Salmon on each plate with a handful of wild rocket. Dot each plate with a few teaspoonfuls of dressing.
