Baked Potatoes with Salar Flaky Smoked Salmon and Lemon Cream

Per person :
One big baking potato
150g Salar Flaky Smoked salmon, chopped into pieces
4 tbsp creme fraiche (or single cream)
a generous squirt of lemon juice
salt, pepper, chopped parsley
Method:
Stab each potato a few times with a fork, wrap in foil and bake in the oven for approx 1 hour. Remove the foil and bake for a further 30 minutes. If you are in a hurry, you can microwave the potatoes 10-15 minutes before finishing them off in the oven for the last half hour to crisp up.
Pour the cream into a frying pan and warm over a low heat. Add the lemon juice and before it starts bubbling, add the Flaky Smoked salmon.
Continue to warm through the Flaky Smoked Salmon and cream mixture, stirring constantly, over a very low heat. If it starts bubbling too much, add a little extra cream to cool it back down.
Chop each potato in half, sprinkle with salt and pepper. You can add a knob of butter if you so wish.
Pour the warm Flaky Smoked Salmon and cream mixture over the top of the potatoes and sprinkle with chopped parsley.
