Salar Flaky Smoked Salmon Boats (great for the kids, small and large)

Ingredients:
5 ounces [142 g] Salar Flaky Smoked Salmon, broken into pieces
2 medium-size cucumbers
2 to 4 lettuce leaves
2 tablespoons finely chopped sweet green pepper
2 tablespoons finely chopped celery
2 tablespoons finely chopped green onion
1 teaspoon freshly chopped parsley
1 hard-boiled egg, chopped
2 medium tomatoes, diced
1 teaspoon lemon juice
1 tablespoon mayonnaise
1 tablespoon light yogurt
Black pepper
Instructions:
To make the 'boats'
Rinse and halve the unpeeled cucumbers lengthwise, remove the seeds and arrange the cucumber boats on the lettuce leaves.
To make the filling
In a bowl, mix together the Flaky Smoked Salmon, chopped green pepper, celery, green onion, parsley and egg.
Gently stir in the diced tomato, lemon juice, mayonnaise, and yogurt.
Add black pepper to taste.
Spoon the mixture into the cucumber 'boats'.
