Salar Flaky Smoked Salmon Coleslaw

Ingredients :
250g Salar Flaky Smoked Salmon, broken into small pieces
1/4 of a cucumber, chopped (and peeled, if you prefer)
4 tbsp mayonnaise
a squeeze of lemon juice
1/2 of a white cabbage, shredded
1 grated carrot
2 hard boiled eggs, sliced
2 tomatoes, sliced
salt and pepper
Method :
Put the Flaky Smoked Salmon pieces into a big bowl, add the mayonnaise and stir until evenly coated.
Season with salt, pepper and lemon juice to taste.
Add the carrot and cucumber and continue stirring until evenly coated.
Add the shredded cabbage, in batches, and stir until evenly coated.
Arrange the egg and tomato slices around the edge of the bowl.
Place in the fridge to chill for an hour and serve with crusty bread.
Great for picnics.
