Shiant Isles Flaky Smoked Salmon

Ingredients:

1 packet of Salar Flaky Smoked Salmon
1 ripe avocado, skinned and cut into pieces
1 peach, skinned and cut into pieces
1 sweet orange, peeled and segments cut in half
Kalamata black olives (warn guest if you leave stones in)
Black grapes, cut in half
Pine nuts
Crushed pepper
Manuka honey
Leaf salad (rocket, cos lettuce and spinach)
Kettle crisps, broken into small pieces

Method:

Open the pack of Flaky Smoked Salmon and reserve the oil. Break the salmon into pieces.

Prepare a bed of leaf salad and mix in the oil from the salmon.

Scatter the avocado, peach, orange, olives, grapes and pine nuts over the salad and dust lightly with the crushed pepper. Drizzle with a sprinkling of honey.

Scatter the pieces of Flaky Smoked Salmon on top and scatter the Kettle Crisps over the whole dish.

Serve immediately.
