Salar Flaky Smoked Salmon and Vegetable Flan

Ingredients

150g / 6 oz Salar Flaky Smoked Salmon broken into pieces
1 large head of fresh broccoli, cut into small 2cm (1") pieces
1 medium onion, chopped
1 small green pepper, chopped
100 g / 4 oz grated cheddar cheese
375 ml / 13 fl oz milk
Salt and pepper
3 eggs
Shortcrust Pastry to line a 10 inch flan dish

Method

Preheat oven to 200°C*/400°F/Gas Mark 6

Grease a 25cm (10") quiche dish and line it with the pastry. Put some baking beans on the pastry and bake until the pastry turns golden.

Bring 2cm (1") of salted water to the boil, tip in the broccoli and cook for about 5 minutes, until almost tender. Drain thoroughly.

Sprinkle the broccoli, onion, cheese and Flaky Smoked Salmon into the quiche dish, distributing everything evenly.

Lightly whisk the remaining ingredients (milk, eggs and seasoning) in a bowl until blended. Gently pour the mixture over the vegetables and salmon in the quiche dish.

Bake uncovered for 35 to 40 minutes, until a knife inserted into the centre comes out clean. Let the flan stand for 5 minutes before serving.
