Salar Flaky Smoked Salmon with Lemon and Tarragon

Ingredients :
250ml white wine
125ml water
1 onion
bay leaf
3 cloves
parsley
1 teaspoon tarragon
peel of a quarter of a lemon
pinch of sugar
salt
500g Salar Flaky Smoked Salmon
For the sauce :
75g butter
2 egg yolks
3 tablespoon lemon juice
1 teaspoon cornflour
Method :
Place all the main ingredients, except the Flaky Smoked Salmon, in a saucepan and simmer gently until the flavours are mixed.
Meanwhile mix the following sauce ingredients - egg yolks, lemon juice and cornflour.
Take the liquor off the boil and place the Flaky Smoked Salmon in it to warm and to add flavour.
When the salmon is warmed, remove it from the liquor and place it in a warm oven, covered in foil, to keep warm.
Strain the liquor and return it to the saucepan. Gradually add the butter, teaspoon by teaspoon, then add the sauce ingredients, stirring all the time.
Adjust the flavour and pour over the salmon.
Place under a pre-heated grill to brown slightly.
Garnish with parsley and lemon slices.
