Salar Flaky Smoked Salmon Jacket Potato

recipe by Tom Hearne, Bath, serves 1


Ingredients:
100g Flaky Smoked Salmon, broken into pieces
1 medium baking potato (scrubbed)
30g butter
80g goat's cheese
2 spring onions (chopped, both white and green)
salt and pepper

Method:
Bake the potato in a moderate to hot oven until cooked and crisp then cut horozontally and scoop out most of the inside leaving 2 shells. Roughly crush the potato flesh and stir in the butter and chopped spring onions. Season generously with black pepper but lightly with salt, because both the salmon and the cheese are reasonably salty. Fold in the Flaky Smoked Salmon and fill the potato shells with this mixture. Cover the top of each with sliced goat's cheese and bake in a hot oven for about 15 minutes, until piping hot and the cheese has melted.

Serve with a crisp salad.
