Salar Flaky Smoked Salmon with Hot Sweet Potatoes or Baked Potatoes
recipe by Sue Bourne, Leeds, serves 4 as a light meal
Ingredients:
8 oz Salar Flaky Smoked Salmon broken into flakes
4 medium size sweet potatoes
butter
fresh parsley and basil (chopped)
2 tablespoons good quality mayonnaise
3 - 4 tablespoons natural yoghurt (Greek is good)
1 lemon
1 yellow pepper
black pepper.
Method:
Bake the sweet potatoes.
Stir together the mayonnaise, yoghurt and fresh herbs. To blend the ingredients together, warm for a few seconds only and shake together.
Fold in the Flaky Smoked Salmon and add freshly ground black pepper.
Remove the seeds from the yellow pepper and cut into crispy slices.
Serve on blue plates. Split the hot, baked sweet potatoes into 2 lengthways and dot each half with butter. In between each pair pile the Flaky Smoked Salmon sauce and garnish with slices of yellow pepper and wedges of lemon.
