Salar Flaky Smoked Salmon in Tomato with Garlic

Anna Guest. Serves 4 as a main meal or 6 as a light snack.


Ingredients
1 small onion, diced
1 teasp olive oil
1 clove garlic, crushed
1 cup tomato puree
200g Salar Flaky Smoked Salmon, drained of oil
1 teasp dried oregano

Instructions
Place the onion and oil in pan over medium heat and cook for 2-3 minutes, or until onion is soft.

Add the tomato puree and garlic.

Mix in the Salar Flaky Smoked Salmon and season with oregano. Cook over medium heat for approximately 5 minutes.

Cool, then blend the sauce in food processor until desired consistency.

Reheat to serve.

You can serve this dish in a number of ways:

As a main meal with seasonal vegetables and potatoes : blend for only a short time and leave it quite chunky.

As a lunch snack with crusty bread : blend but still leave chunky bits.

As a starter / hot buffet with crusty bread, crackers or bread sticks : blend until smooth and use it as a dip.
