Oven-Baked Salar Flaky Smoked Salmon in a Lemon Oatmeal Crust

Ingredients
300g pack of Salar Flaky Smoked Salmon
100g oatmeal
50g flour, seasoned with black pepper and garlic salt
the juice and zest of 1 lemon
1 egg, beaten
2 tablespoons olive oil
Method
Pre heat the oven to 180C.
Put the seasoned flour on a plate and put the beaten egg in a separate shallow dish. Combine the oatmeal and the zest from the lemon and put these on another plate.
Take the Flaky Smoked Salmon, dry it on kitchen paper then dip it in the flour to lightly coat it on each side, then dip it in the beaten egg (it may be easier to use a clean brush to lightly coat the salmon with the egg). Carefully press the Flaky Smoked Salmon into the oatmeal so that it is evenly covered on both sides.
Place in an ovenproof dish, drizzle over olive oil and bake for 20-25 minutes until the Flaky Smoked Salmon is thoroughly warmed through and the oatmeal has turned golden brown.
Squeeze the lemon (used for the zest) over the salmon just before serving.
Delicious served with fluffy mashed potatoes or thick chips !
