Salar Flaky Smoked Salmon Pasta with Vodka Sauce

I first tasted Salar Flaky Smoked Salmon while visiting a friend in Milngavie, Scotland and found it absolutely delicious. Here is a recipe that compliments it - the flavors meld perfectly. It's quick and easy yet elegant enough to serve at your best dinner parties.
Ingredients
Pasta, fresh fettuccine – enough for 6 people
3 fluid ounces vodka
¼ teaspoon crushed red chilli pepper (to taste)
500g fresh Roma tomatoes, peeled, seeded and coarsely chopped
1 cup double cream
¼ cup butter, chopped into small pieces
¼ cup Parmesan cheese, grated
350 g Salar Flaky Smoked Salmon, broken into pieces
Fresh parsley, chopped
Method
Put the pasta on to cook (check how long it needs).
Put the vodka and the crushed red chilli pepper into hot skillet, making sure that the steam is vented (it will make your eyes burn!). Cook for 3 to 4 minutes.
Add the chopped tomatoes and cook uncovered for 5 minutes.
Add the cream and then the butter in small pieces. Cook until the water from the tomatoes has evaporated.
Stir in the parmesan cheese.
Toss with the hot, cooked fettuccine.
Put the pasta and sauce into a warm serving dish or onto warm plates and arrange the pieces of Salar Flaky Smoked Salmon on top. Garnish with chopped fresh parsley.
Serve with salad and hot bread.
