Salar Flaky Smoked Salmon Fish Cakes with Coriander

Recipe inspired by Lindsey Bareham, serves 4 - 6


Ingredients
450g potatoes
100g spring onions
1 red birds eye chilli
Approx 5 tablespoons vegetable oil
1 large egg, whisked
Approx 4 tablespoons flour
250g Salar Flaky Smoked Salmon, broken into pieces
25g coriander, chopped (including stalks)
Freshly ground black pepper
Lime wedges

Method
Peel the potatoes, cut them into small chunks and put them on to cook.

Trim and finely slice the spring onions, including all the green. Trim and finely chop the chilli.
Heat 1 tablespoon oil in a frying pan and gently soften the onions and the chilli.

Drain the cooked potatoes well and mash them, transfer to a mixing bowl and sift 1 tablespoon flour over the top. Use a fork to work the flour into the mash.

Pour the whisked egg over the mixture.

Scatter the warm onions and chilli, Flaky Smoked Salmon pieces, chopped coriander and a good seasoning of black pepper over the eggy potatoes and use the fork to mash and mix the ingredients evenly.

Form into a ball.

Generously dust a large plate with flour and have a second plate at the ready.

Take 1 tablespoon at a time of the mixture, drop it onto the floured plate and use floured hands to quickly form into a small, chunky fish cake, approx 6cm x 2 cm deep. Transfer to the second plate as you go. You should end up with 21 – 24 fish cakes (which can be chilled or frozen at this stage).

Wipe the frying pan and heat half the oil. When hot, but not smoking, fry the cakes in batches of 6. Cook without touching for a couple of minutes until a crust forms, turn and cook the other side as before.

Transfer the golden-crusted cakes to a non-stick oven sheet.

5- 10 minutes before you are ready to eat, transfer them to the oven heated to 400ºF / 200ºC and warm through before serving with a lime wedge and your chosen accompaniment.

You can use this recipe to make little, bite-size fish cakes as delicously different canapes.
