Salar Flaky Smoked Salmon Pancakes with Pesto

Ingredients:
120 ml / 4 fl oz milk
115 g / 4 oz self raising flour
1 egg
30 ml / 2 tablespoons pesto sauce
oil for frying
200 ml / 7 fl oz creme fraiche
75 g / 3 oz Salar Flaky Smoked Salmon
15 g / 1 oz toasted pine nuts
salt and freshly ground black pepper
12 to 16 sprigs basil to garnish
Method:
Pour half the milk into a bowl and add the flour, egg, pesto sauce and seasoning. Mix to a smooth batter then add the rest of the milk.
Heat the oil. Pour spoonsfuls of the mixture onto the hot oil and cook each pancake briefly on each side until just brown.
Put a dollop of creme fraiche onto each pancake and place flakes of Flaky Smoked Salmon on top, scatter with pine nuts and garnish with a sprig of basil.
