Grilled Salar Flaky Smoked Salmon Nicoise

recipe by Vanessa Timmis, serves 4


Ingredients:
450g new potatoes
225g french beans topped
1 punnet cherry tomatoes halved
12 marinated black olives
virgin olive oil
freshly squeezed lemon juice
4 x 6oz Flaky Smoked Salmon
oil for brushing
freshly ground black pepper
basil leaves and lemon slices to garnish

Method:
Cut the potatoes in half and cook them, drain.

Plunge the french beans into boiling salted water for 3 minutes until cooked, but still with a bite.

Place the new potatotes in a warm dish with the french beans, tomatoes, olives and olive oil. Grind black pepper over the vegetables and add lemon juice to taste.

Heat a ribbed pan until very hot.

Brush the Flaky Smoked Salmon lightly with olive oil and grind black pepper over the fish.

Cook the fish for 3-4 minutes, turning once.

Arrange in the dish with the dish with the potatoes, beans, etc, garnish with basil leaves and lemon and serve immediately.
