Breakfast Sandwich Gateau
recipe created by www.breakfastandbrunch.com
This is a most unusual savoury breakfast gateau - well worth trying.
Serves 4-6
1 round granary cob loaf
For the filling:
6 hard-boiled eggs
150g peeled prawns
200g-flaked Salar smoked salmon
100ml creme fraiche
100g Hellman's mayonnaise
1 tablespoon finely chopped fresh chives
1 tablespoon finely chopped fresh dill
Sea salt and Percy the black pepper mill
For the garnish:
Slices of cucumber
Lumpfish roe
Homemade chisps (the bought ones are called crisps)
Mix together all the ingredients for the filling. Cut the loaf into four thick tiers (much like a layered sponge cake). Spread the filling thickly between the layers of bread and re-assemble the loaf.
Place the sandwich gateau on the centre of a round breadboard and garnish with cucumber slices sprinkled with lumpfish roe and swathes of hot homemade chisps.
