New Yorker Bagel with Salar Flaky Smoked Salmon

Once uniquely Jewish fare, bagels now enjoy a wider popularity, though they are not yet as common here as they are in the United States where they have become a standard brunch item.
Serves 6
Salar Flaky Smoked Salmon
6 fresh bagels
200g cream cheese
200g Salar smoked salmon
1 red onion sliced
3 tomatoes, sliced
1 avocado skinned, stone removed
24 thin slices cucumber
2 dessertspoons of capers, drained and rinsed
Halve each bagel and toast the cut side. Mash the avocado with a little lemon juice, a pinch of salt and freshly ground black pepper. Spread top and bottom of each bagel with cream cheese and the avocado. Onto the bottom half of each bagel pile the smoked salmon, onion slices, tomatoes, cucumber and capers.
Pop the top back on the bagel and devour immediately while driving through Manhattan in a yellow cab.
