Salar Flaky Smoked Salmon Croutes

Ingredients:
Flaky Smoked Salmon, broken into flakes
100 g Philadelphia or similar soft cheese
1 tablespoon finely chopped capers and cornichons creamed horseradish
lemon juice
French bread
salad leaves, chives
Dressing :
1 teaspoon Dijon mustard
1 tablespoon balsamic vinegar
2 or 3 tablespoons walnut oil
Method:
Cut one and a half inch thick slices off a French loaf and bake for about 10 minutes in the oven until they are crisp. Allow to cool slightly.
Put the soft cheese in a bowl and mix in about one tablespoon of finely chopped capers and cornichons. Add a little creamed horseradish and a dash of lemon juice.
Spread the croutes generously with the cheese mixture and top (generously!) with flakes of Flaky Smoked Salmon.
Make a vinegrette dressing with the Dijon mustard, balsamic vinegar and walnut oil and use this to lightly dress the salad leaves.
Pile the salad in the centre of the plates and place croutes on top. Garnish with whole chives.
Delicious as a starter or light lunch dish.
