Salar Flaky Smoked Salmon with horseradish and spring onion potatoes

INGREDIENTS FOR A MAIN COURSE
1.2kg of peeled cooked new potatoes
80g of mayonnaise
100g horseradish relish
½ bunch chives finely chopped
60g spring onions finely chopped
Flaky Smoked Salmon

METHOD
Crush the new potatoes, mix with the rest of the ingredients, except the Flaky Smoked Salmon, and lightly season.

Place a neat pat of the mixture on the plate and top with Flaky Smoked Salmon.

FOR A STARTER
Use smaller quantities and serve with a twist of cold smoked salmon, a slice of pate, a tomato 'rose' and a cucumber 'rose'.

Decorate the plate with a ring of herb oil and drops of balsamic vinegar.
